Adam and I have been rolling our own sushi lately. Last night was our 3rd attempt, and we are getting the hang of it! Still a little messy, as you can see, but it is so much fun and WAY cheaper than going to a sushi restaurant. Lessons learned last night: seriously, go easy on the chili paste, and the less rice the better.

Wow, your sushi looks way better than mine ever does. And I can't get the rice to taste right, either. How do you do it?
I mix up some rice wine vinegar with sugar AND salt. For 2 cups of rice, I'd use about 3-4 tbsp of vinegar, 1 tbsp sugar, and a tsp salt. Mix this up really well so that the sugar and salt are totally dissolved. Then pour it over your hot rice and mis it in, trying not to break up all the rice grains while you're stirring it. Then let the rice cool to room temp. I got this from a sushi cookbook and this method was backed up by a few sushi websites too.
